Across the shrub-studded prairies of the American midwest, herds of bison roam with wild bellows and thundering hooves. Under the same blazing sun, rows of leather dry beneath its beams, with campfires beneath raising curled tendrils of smoke into the sky. Long before modern industry and mass agriculture, the native peoples of the midwest tanned the leather hides of their recent animal quarry with smoke. Not only did this help the leather repel insects, but it imbued the hides with the delicious scent of the campfire itself.
